Fellows Gathering in San Antonio, TX
The Gild of Fellows gathered at The CIA San Antonio, on Feb sixteen - 17. Fellows enjoyed a individual curated dinner at Casa Hernán hosted past CIA Swain, Chef Johnny Hernandez '89. The dinner celebrated the rich and delicious foods from interior Mexico. The post-obit day started with an authentic TexMex breakfast on campus followed by an amazing private tour and custom lunch feel at The RK Group Headquarters & The Red Berry Estate hhosted by CIA Swain Mary Carrington and the Kowalski Family. The afternoon concluded with McCormick'south Flavour Forecast presented by Chef Gary Patterson. The evening kicked off with a reception and dedication in the newly named Ecolab Theater where Fellows enjoyed cocktails and hors d'oeuvres prepared by CIA students. And last but not least, the two-day event concluded with a private, custom dinner prepared and hosted by Chef Steve McHugh '97 at Cured. Fellows delighted in Chef McHugh'due south use of the purest regional ingredients built on a foundation of lovingly mitt-crafted and cured foods which were paired with local wines donated from Angle Make and Southold wineries. Both dinners were prepared with products donated by Fellow Drew Calvert of Niman Ranch. Cheers to the following:

Fellows Gathering in Hyde Park
The two-day event kicked off with a conversation, demo and tasting with Fellow Bruce Moffett '95, Owner, Moffett Restaurant Group and Fellow Lauren Ackerman, Owner, Ackerman Family unit Vineyards. Fellows enjoyed an interactive demo and small bites from Chef Moffet's accolade-winning cookbook, Bruce Moffett Cooks, paired with world-class wines from the Ackerman Family Vineyards, a certified organic farm.

The evening ended with a private Farm-to-Table Wine Dinner in American Compensation with Carissa Ashman from Trū Wīn Cō & Jaime Araujo from Trois Noix curating the wine.

The next morning, we kicked off the solar day with a signing of his well-nigh recent volume, Living Staff of life by Chef Dan Leader '76, Owner, Breadstuff Alone, who also donated the succulent breakfast pastries that Fellows enjoyed.

Post-obit breakfast students shared inspirational stories of the touch on Fellows make on their lives through scholarship support, and Fellows shared stories of how our students have changed theirs!

The morning programing ended with a bang and a delicious bite… of amazing cheeses. Caroline Hostettler, Owner, Quality Cheese/Adopt-An-Alp shared a fun and interactive presentation/tasting of the wonderful earth of cheeses!

Fellows dined in the Ristorante Caterina de' Medici, toasting with delicious wines donated by Fellow Cristina Mariani-May of Banfi Vintners. Sandra Krut, the Director of Marketing from Castello Banfi shared her insights on the Italian wines we enjoyed during the repast.

Later on lunch Fellows fabricated their manner to the Danny Kaye Theatre to sample some DASSAI sake with the presentation/tasting led by Stuart Morris, certified Kikisake-shi (Sake Master) and sake sommelier at PABU in San Francisco. Together with CIA Professor John Fischer '88, he helped Fellows discern the subtle, ethereal, and fragile notes of sake while enjoying the sweetness, dry and acidic components of its flavor contour.

At day's end, Fellows joined the Board of Trustees at a reception in Ristorante Caterina de' Medici, followed past a beefsteak dinner in Farquharson Hall where everyone enjoyed a dark of beef, beer, brass bands, and gluttony. Premium wines from Castello Banfi, Jackson Family Wines, and JUSTIN Winery, as well as bourbon from Prohibition Distillery were generously flowing.

Fellows Gathering in Napa Valley
The 2-twenty-four hours issue started with a fabulous wine and cheese reception at the elegant Ackerman Heritage House where Fellows enjoyed the luxuriously appointed ambiance while sipping world-form wines and indulging in artisan cheeses. Thank you to Young man and owner of Ackermann Family Vineyards, Lauren Ackerman, for hosting the states!

The next morning Fellows enjoyed an interactive presentation and tasting experience on the "hereafter of flavor" with Fellow and Chef Gary Patterson, Executive Research Chef-Manager Culinary Scientific discipline, McCormick & Co.

Between the morning time programs, Fellows joined the Lath of Trustees in the dedication of the Ecolab Theater at The CIA at Copia. The grouping toasted Fellow and Ecolab, Inc. Executive Vice President Mike Hickey.

The morning programming ended with a dynamic presentation past Dr. Ryan on the importance of inventiveness within the culinary field at the newly dedicated Ecolab Theater.

The afternoon ended at the Louis Yard. Martini Winery with two educational tastings. Chef Jeffery curated a tasting of cheeses and CIA Graduate Jeff Mall '95, owner of Volo Chocolate, dazzled with a sampling of his corrupt chocolates. The 2d included dessert and a sparkling wine pairing lead by CIA graduate, E&J Gallo Winery Director of Consumer Events, Lindsey Auchter '07.

2019 Fellows Weekend Getaway
Asheville, NC
Fellows kicked off the weekend with a historical and hysterical Lazoom Bout of Asheville followed by a lavish welcome reception hosted by Fellow Peter '95 and Martha Pollay of Mandara Hospitality Grouping at Capella on ix rooftop restaurant, bar and lounge.

Fellows kicked off their Saturday morning with a savory and mouth-watering breakfast at The Deerpark Restaurant at The Biltmore. The natural setting offered plenty of rustic charm and sweeping views of estate pastures from its front door. Post-obit breakfast, Fellows enjoyed a individual agricultural bout narrated by Pastry Sous Chef Heidi Badger '12 where they learned all about the estate's rich agricultural history, legacy of forestry, and innovative farming programs.

Fellows enjoyed a variety of drinks and dishes throughout beautiful downtown Asheville, learning some history along the way on a customized walking luncheon tour.

Fellows enjoyed imaginative seasonal items, showcasing the best of the region'southward produce and products in a warm and inviting atmosphere paired with delicious and unique wines from Jones von Drehle, a local Asheville winery.

Fellows Gathering in San Antonio Texas
The upshot started with a individual Riverwalk boat tour along the San Antonio River. Our first stop, Jason Dady's Tre Trattoria, newly relocated to the San Antonio Museum of Fine art in the historic Beretta Hops Firm! Jason lavished united states with Italian-inspired hors d'oeuvre and cocktails.

Fellows hopped dorsum on the boat and listened to fascinating stories about the urban center's culture, history and compages while on the style to Range, Jason's modern American bistro, for dinner.

At Range Fellows enjoyed a fine-dining experience in a casual, outgoing setting. The menu including stunningly beautiful American Wagyu beef and extremely tender Kurobuta pork provided by Snake River Farms and Boyfriend, Dave Murphy.

The side by side morning Fellows were hosted past CIA distributor C. H. Guenther & Son, Inc. for a delicious hot breakfast with mimosas in the roof garden at the C.H. Guenther Business firm, the oldest factory due west of the Mississippi, while learning a flake about the history of San Antonio.

And then the competitive spirit was awakened with a fast-moving authentically San Antonian team challenge. Fellows split into groups to partake in a scavenger hunt all around the city. At that place were no losers simply the Sporks team won big!! Congratulation Sporks!

After working up an appetite, Fellows dined at the newly renovated Baker Café at the CIA's student-staffed restaurant, Relish. Fellows left with a tasty treat made peculiarly for them by the CIA baking and pastry students.

The day ended, every bit all days should… with tequila! Beam Suntory hosted an amazing tequila-tasting party. Fellows enjoyed El Tesoro Margaritas while making their very ain molcajete crushed spice mix to savour with their tequila at dwelling!

The evening started with a reception with the Board of Trustees with hors d'oeuvre prepared by CIA students and served past the Kikkoman Live Fire Kitchen on our San Antonio campus at The Pearl. Post-obit, a Latin-inspired Beefsteak dinner, prepared past Fellow and CIA Alumni Council Chair Johnny Hernandez '89 was enjoyed by all at the uniquely elegant The Stable at The Pearl.

Fellows Gathering in Hyde Park
The two-day event kicked off with a welcome reception at the fabulous dwelling house of Fellows Joe & Maria Lepore. Fellows enjoyed food prepared past our local chefs and Fellow Nick Citera, owner of Cosimo'south Brick Oven Pizza, using the Hudson Valley'due south fall bounty. We give thanks Joe and Maria, Fellows Roger Riccardi of Due east&J Gallo, and David Bova of Millbrook Winery for the delicious wines, Eric Baxter of Millhouse Brewing for the craft beers, and Eamon Rockey '06 for the Rockey'south Milk Punch!

The next morning started with an inspiring talk and interactive presentation past writer, actor, and author Pam Sherman on The Sherman EDGE™: helping individuals and teams ignite passion for their mission through actuality and expressiveness in leadership, business and organizational development, and communications.

Pam got the crowd pumped and set up to savour some astonishing seafood prepared past Fellow, Joe Gurrera, owner of Citarella Gourmet Markets and writer of Joe Knows Fish. Joe explained how he grew a niche market into a company that serves near 5 million customers annually and sells two 1000000 pounds of seafood each year. Fellows enjoyed a demonstration and tasting of a ceviche recipe from the book.

Afterwards luncheon Fellows made their style to the Danny Kaye Theatre to sample "The Stuff that Makes Ice Foam Taste Great." Fellow Ben Katzenstein '83, fourth-generation owner of Star Kay White, explained the history of his flavorings manufacturing company and how his didactics at the CIA set his company upwards for expansion and success. Then we ate…. lots of ice cream, caramels & candy flavored with his ingredients. YUM is all we can say!

The day'due south programming concluded with a presentation and demo on how virtual reality is revolutionizing eatery pattern. Boyfriend Steve Tinkelman, managing member of Tinkelman Architecture, discussed the latest virtual reality development trends and the hereafter of the technology in the world of design.
Fellows received their own VR glasses and became immersed in actual building concepts.
At day'southward finish, Fellows joined the Board of Trustees at a reception in Farquharson Hall, followed by a moveable feast where everyone enjoyed a course in each of our three award-winning restaurants. The gathering closed with a dessert reception.

Fellows Gathering in Napa
The 2-day consequence started with a welcome reception at the Gordon Huether Fine art Studio. Thanks to Gordon Huether and Fellow and studio director Darcy Tunt for hosting us at the studio and Fellow Roger Riccardi of East&J Gallo for the succulent wines!

The adjacent forenoon Fellows started the day with a hands-on cooking course where they masterfully prepared fondue, risotto, lamb skewers and fresh strawberries sabayon with state-of-the-art equipment in the brand new Hestan Teaching Kitchen at the CIA at Copia, then dined on the fruits of their labor.

The afternoon ended at the Hestan Barn where Fellows enjoyed accolade-winning, limited-release Hestan Vineyards wines on the Infinity Terrace. Hestan Vice President of Sales Basil Larkin demonstrated the Hestan outdoor grill, followed by some delicious bites. Philip Tessier '99 provided an introductory presentation to the Hestan Cue, followed by a dessert tasting. Philip is an award-winning chef, writer, motorbus, culinary partner and innovator, who was the first American chef to e'er place on the podium at the biennial Bocuse d'Or competition in Lyon, French republic, and nigh recently coached the 2017 U.South. team to victory.

Fellows Weekend Getaway in Dallas
The weekend began with an sectional and lavish reception, complete with live chef activity stations, music and dessert, in the brand new, state-of-the-art culinary center at Avocados From United mexican states, hosted by Fellow Mark Garcia '91. Fellows indulged in delicious food, elegant wines from Coquerel Vineyard courtesy of Dr. Clay Cockerell, and enjoyed beers provided by our friends at MillerCoors.

Following the welcome reception, Fellows gathered at the Toyota Music Factory enjoying hits from the American country music icon, singer-songwriter, Brad Paisley.

Saturday morning started with a VIP Tour at AT&T Stadium, including a terminate in the Dallas Cowboys locker room, followed by an sectional culinary tour led by Chef Tony Sinese. A family unit-way BBQ luncheon was prepared and specially customized by Tony and his team for Fellows to savor in the private stadium gild.

Fellows enjoyed a bus tour of the urban center's most popular sites, too as journeyed dorsum in time to 1963 to follow the path of JFK on that fateful 24-hour interval in November.

Fellows sipped on signature margaritas while enjoying some traditional Mexican tasty bites at Mesero'southward. And and so… let the contest begin! Fellows were divided into teams and given ingredients to create a unique and "laurels-winning" guacamole. After a blind taste test the winners were revealed!

The evening concluded with dinner at Fearing'due south Eatery at The Ritz Carlton, where fellows enjoyed the bold, no-borders cuisine of celebrity chef, country recording artist, guitar connoisseur and acknowledged cookbook author Dean Fearing '78.

Fellows and Trustees Gather in New Orleans
On February 22, 2018, Fellows enjoyed a total day of activities in New Orleans, LA. Thanks to our host, CIA Trustee Ralph Brennan!

In true N'awlins fashion our day started with oysters, Tabasco® and bourbon! We congregated at P&J'due south Oyster Business firm, the oldest oyster house in America. Fellows enjoyed freshly shucked oysters, po'boys on homemade bread, and a delicious dial concocted with Maker'south Mark and Maker'southward 46®. We heard from Sal Sunseri, owner of P&J'southward; Sandy Wahn, owner of theLeidenheimer Blistering Company; Tony Simmons, President/CEO of the McIlhenny Company and Joe Meteye, Luxury Specialist for Beam Suntory.
A custom walking bout of the French Quarter was designed exclusively for the Fellows by Destination Kitchen Tours. Fellows enjoyed a sensory journey to famous eateries and markets in New Orleans' oldest quarter learning about the city'south rich and circuitous culinary history.
New Orleans' culture comes bubbles up from the streets and one of the most unique local expressions of this sort of culture is the second line parade. Fellows joined in the civilization and traditions of New Orleans by second lining to Brennan's led by Brennan's own brass band!

The evening finished with a reception and dinner with the Board of Trustees, hosted by Trustee Ralph Brennan at Brennan'southward Eating place, a New Orleans tradition since 1946. There were too a few special guest appearances for Dr. Ryan's surprise altogether party!

Fellows and Trustees Get together on Hyde Park Campus

On October 4, 2017, Fellows enjoyed a full mean solar day of activities on the Hyde Park Campus. Our exciting day began with a conversation and wine tasting with actor and winemaker, Kyle MacLachlan. Fellows learned near his wine, Pursed by Bear, produced in Walla Walla, besides as the significance of this special terroir region of Washington State; all while sampling his Rose, Cabernet and Syrah. Yum!

Subsequently lunch, Fellows returned to the Danny Kaye Theatre to hear Fellow, real estate entrepreneur and hotellier, Laurence Geller, share the history of the North American lodging manufacture.

The afternoon programming wrapped up with a demo and tasting focusing on sustainable seafood by glory chef, Rick Moonen '78. Chef prepared a delicious Cioppino Fra Diavolo, with assist from some of our fabulous students.

and concluded with a succulent and wildly fun Beefsteak Dinner with the Board of Trustees.

On June xiv, 2017 Fellows enjoyed a individual tasting and bout of Freemark Abbey Vineyard, courtesy of our friends at Jackson Family unit Wines, which just underwent a complete renovation and is celebrating its 130th year anniversary. Sr. Manor Manager, Chris Jahns, and the Managing director of Wine Making, Ted Edwards, walked Fellows through the winery while sampling delicious wines from Freemark Abbey'southward private tasting room, sometime stone winery, members simply lounge, library and barrel room.

From there, Fellows headed over to Kendall-Jackson Wine Estate & Gardens where they enjoyed a private 3-course family style lunch sourced directly from their gardens and prepared by CIA trained chef, Matthew Lowe '78. On the tables were succulent blends of wines and teas that paired perfectly with the repast. After lunch, Fellows were treated to a individual bout of the gardens with Tucker Taylor, Master Culinary Gardener, where they sipped delicious blends and learned all almost the wines through their interactive sensory gardens.

CIA Fellow Fred LeFranc and his wife Lauren LeFranc, owners of Results Through Strategy, hosted the 2017 Fellows Weekend Getaway on March 31st thru Apr 1st in beautiful Charlotte, NC. The LeFranc'southward pulled out all the stops, kick off the weekend at their lovely home on Friday evening. The effect began with an unbelievable welcome reception prepared by CIA alumni Stratos Lambos '96 and Angelo Kaltsounis '96 of Xenia Hospitality Grouping, which included a fabulous cocktail hour, raw bar and three-piece Brazilian band, followed by a five-course family-manner Mediterranean feast. The result hosted over sixty attendees, including Fellows and guests.

Later that afternoon we visited CIA alumnus, Bruce Moffett '95 of Moffett Eating place Grouping for a tasting at Stagioni. Chef Moffett shared the rich history of this restaurant (one of 3) and his love and affinity for the CIA with the group. The afternoon ended with a private cocktail lesson and reception with Master Mixologist, Bob Peters at the Ritz Carlton'south "surreptitious bar", The Punch Room. After a scrap of balance, Fellows reconvened in the Parlor Room at the Celebrated Dunhill Hotel for a individual cocktail reception and v-course wine dinner with the Executive Chef of The Asbury, Matthew Krenz.
During the Fri reception, we welcomed two new Fellows Jeb Ball, Managing, Director, Brookwood Associates and Christopher Sebes, President, Heartland Commerce, and presented them with their Fellows certificate signed by President Ryan and lapel pins, as well equally recruited 3 new Fellows prospects. The group left on Sunday for their respective cities with wonderful souvenir bags courtesy of Fred and Lauren LeFranc.

Fellows and Trustees Gather on Texas Campus
Hello Y'all! On Feb 16th and 17th, 2017 the CIA Fellows joined the Board of Trustees, Chiffonier Members, staff, students and friends in San Antonio's iconic Pearl Brewery Commune. The two-twenty-four hours event began with luxury accommodations at the all-new, laurels-winning Hotel Emma. The weather condition was warm and spirts were high equally we visited the many shops and CIA alumni-owned eateries in Pearl.
Wed evening the group gathered for a family unit-style supper at San Antonio's #1-rated eating place, CURED, owned and operated by CIA alumnus Steve McHugh '97. The 24-hour interval's activities on Thursday began with breakfast in the expo kitchen at Hotel Emma, followed past a private hotel tour with Emma'south own, Chef John. Later that morning, we enjoyed the outdoors with a cultural immersion into the history of San Antonio'south Riverwalk Art Scene and a visit to the San Antonio Museum of Art; then a quick terminate just before lunch at Pearl's newest restaurant Botika, owned past Chef Geronimo Lopez, the opening chef of CIA restaurant NAO Latin Gastro Bar. After dejeuner, nosotros spent time on campus with glory chef, CIA alumnus, Fellow and Alumni Counsel Vice Chair, Johnny Hernandez '89. Chef Johnny led a demo and tasting on his signature paella, which he has used to create an annual fundraiser, The Paella Claiming, to benefit scholarships for local high school students and CIA students. If that wasn't enough, Matt Voss then educated the group on the tequila-making process—from the organic farm to the harvesting of the agave plant—and the Fellows tried 7 unlike varietals of tequilas.
A quick change and perhaps a power nap from the day's adventure and nosotros were back on campus effectually the alive fire pit for the Board and Fellows reception including a margarita bar, two fully roasted pigs and a four-person Mariachi Band. The evening concluded with a Latin-themed 5-course dinner prepared by our very own CIA students. Fellows and Trustees Gather on New York Campus
Over 130 Fellows and guests gathered on the New York campus on Thursday, October sixth, 2016 for what was our largest Fellows event to date. Fellows non only attended but stepped up to contribute to the day's events with presentations. Fellow Richard Reinis presented Managing in Boxing: The Reality Evidence, a real-life case study of how business executives make decisions nether the pressures of expansion and sudden, extreme contraction. Simultaneously, Terry Frishman, CEO of Culinest consultancy and culinary concern educator, shared a presentation and tasting with the Fellows titled Innovation, Disruption & Opportunity in the Nutrient Industry where she highlighted her 12 MegaTrends and addressed how consumer attitudes can exist applied to increase business opportunities, consumer interest and loyalty. Post-obit a wonderful lunch in the Ristorante Caterina de Medici, the afternoon activities included presentations and tastings from McCormick, Inc., Hudson Valley Foie Gras, The Brewery at the CIA, and Mionetto, Us. This jam-packed solar day of programs and class options culminated in a fantastic reception and dinner with the Board of Trustees in beautiful Farquharson Hall. Fellows and Trustees Gather on Greystone Campus
Near fifty guests consisting of Fellows, their spouses, and business associates gathered on the California campus at Greystone on May 11th, 2016 for a solar day full of activities in the St. Helena and Napa areas.
Hosted by Cairdean Manor Co-founder Stacia Williams, Fellows toured this one-of-a-kind wine and food destination including 17,000 square feet of caves, and sampled award-winning wines in the Cairdean Tasting Room.

Outcome attendees besides had the option of participating in programming hosted by Dean Will Rosenzweig and Manager Cathy Jörin of The Food Concern School (FBS), the new center for executive and graduate educational activity of The Culinary Institute of America. A presentation by Dean Rosenzweig on The Dynamic Changing Nutrient System and the Importance of Business Innovation was followed by an interactive innovation session with an executive team from Revolution Foods.
Following lunch with the Board of Trustees, Fellows got a immediate wait at the CIA at Copia with a bout guided by Senior Advancement Officer Holly Briwa and Managing Manager Thomas Bensel. Situated adjacent to the Oxbow Public Market on First Street in downtown Napa, our newly expanded California campus volition provide visitors to the burgeoning Oxbow district with an array of nutrient and vino offerings.
Afterwards a walking tour of downtown Napa, Fellows arrived at the Ackerman Heritage House. Hosted by CIA Fellow and co-founder of the Ackerman Family Vineyards, Lauren Ackerman, the Fellows indulged in a wine tasting and individual tour of this recently restored 1888 Queen Anne.

Fellows in New Orleans
In April 2016, Fellows descended upon the BIG EASY for a ane-of-a-kind getaway during the NOLA FoodFest. Hosted by Fellows Julia 'sixteen and Steve Rushmore, this group of fifty Fellows enjoyed a weekend of fun and dining. Fellows were welcomed on Friday evening at a private reception in the French Quarter, and so paraded to dinner in a "Second Line" complete with police escort and contumely band! Graciously hosted by Trustee Ralph Brennan, Fellows enjoyed a fantastic meal at Brennan'southward New Orleans that night. Sabbatum'due south activities included a private autobus bout of New Orleans with stops at a archetype cemetery and Hurricane Katrina Memorial followed by the NOLA FoodFest located at the beautiful New Orleans Riverwalk's Spanish Plaza. The afternoon at the FoodFest included visits to our VIP tent by Chef Nina Compton '01, executive chef and owner of Compère Lapin at the Old No. 77 Hotel & Chandlery along with Michael Gulotta, executive chef and partner at MoPho. The day ended with a private dinner at Eatery August, owned by new Boyfriend Chef John Besh '92. The Gild of Fellows now knows "what information technology means to miss New Orleans!"
